Chicken Peri Peri is a great traditional African spicy marinade recipe, great for BBQ. Goes well with fries and salad. It has its origin from south Africa.




  • 1 onion (chopped)
  • Fresh basil or coriander
  • 1/2  red bell pepper (chopped)
  •  4 cloves of garlic
  • 4  fresh chilli peppers (u may use red, yellow and orange )
  • 1 tablespoon  paprika powder
  • 2 tablespoons vinegar
  • 4–6 thin slices of lemon or Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt (to taste)
  • 4 stock cubes
  • Thyme
  • Rosemary
  • Ginger (optional)
NB– Recipes for the sauce vary across the board so, making this sauce may be optional since the excess marinade can also serve as one

  • Add all the ingredients in a blender
  • Blend to consistency of a creamy paste or liquid.
  • Serve raw

Peri Peri Marinade

  • 4 chicken breasts (can make it Skinless and boneless) 
  • 3 cloves garlic, peeled and chopped
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon paprika
  • 1/4 cup lime juice
  • 1 tablespoon vinegar
  • 1/4 cup olive oil


  1. Season chicken with salt and pepper to taste
  2. Combine all the ingredients in a blender or food processor and blend until puree
  3. Preheat the oven to 400° F
  4. Place the chicken in a large zip up bag
  5. Add the marinade, rub the bag to coat the chicken and close then refrigerate for 4 to 24 hours
  6. Drain off excess marinade and remove the chicken from the bag
  7. Reserve excess marinade
  8. Heat oil over medium heat in a non stick pan
  9. Place chicken in the non stick pan and fry each side until nice golden color
  10. Turn off heat
  11. Add over the chicken the reserved marinade, rosemary, peppers, thyme, lemon slices. Cover the pan with bakery or parchment paper
  12. Bake for about 20 to 30 minutes, or until the chicken reaches desire point
  13. Remove from oven and allow to rest, covered for 10 minutes
  14. Cooking time may vary on the size of the chicken
  15. Serve with the lime wedges and pan juices or you can decide to serve with the separately made sauce 

NB : If you are making a separate sauce  then you may not need to add the excess marinade, rather serve sauce with a small dish bowl beside the chicken
